Spiced Cauliflower & Potatoes, Mushrooms, Pomegranate and Tahini
Humble ingredients turned into a flavour-packed meal! The leftovers ended up being reheated in a pan, mixed with some cooked couscous and finished with the leftover tahini sauce. Delish!
A quick summary of what I did:
Roasted potatoes simply in salt and oil, 200C is good. When they were cooked and almost ready, gave them a gentle squish, tossed them in some Dukkah and returned to the oven for a few mins.
The veggies got coated in oil and spices then roasted.
Mushrooms were fried and finished with garlic, chilli and coriander. And salt of course!
Made a super quick tahini sauce in the Nutribullet with lemon, garlic, coriander, salt and water.
Served it all up with a healthy sprinkle of fresh pomegranate!
